Mysore Pak

Mysore Pak is one of the traditional sweet made during festivals, with besan flour(Kadala Mavu), Ghee and Sugar, It is one of the simple quick sweet with little tricks. Honestly, this is the first time I am making this Mysore Pak, come out super soft and tasty. Every time I am just behind my Mom and helping to make this sweet, Hopefully that helps me a lot. Let’s see how I make this mouth watering recipe.

Besan Flour: Besan flour 200 gram, fresh flour is better to make this recipe, Pour all flour into fine mesh strainer and remove, clean if any dirt or large chunks.

Cooking Oil: Use flavorless oil, like sunflower or vegetable oil, Here I use 100 ml vegetable oil to make this recipe. Or you can use 200 ml of ghee and skip the oil, But I felt it over ghee flavor, so I planned with half oil and half ghee.

Ghee(Melted Butter): 100 ml of clarified butter, or simply use melted butter its fine. If you don’t love ghee then go with 200 ml of oil.

Sugar: Use white sugar 200 gm. It depends the sweetness of sugar, If its over sweet then use 150 gm of sugar, If it is less sweet then use 250 gm of sugar for this type of sweet.

Ingredients:

  1. Besan Flour: 1 Cup (200 gm)
  2. Sugar: 1 cup (200 gm)
  3. Ghee: 1/2 Cup (100 ml)
  4. Oil (sunflower or vegetable Oil): 1/2 cup (100 ml)

Method:

Step 1: First in pan, add ghee and oil and heat it and keep aside. Then Grease with oil or ghee in plate or rectangular shape bowl.

Step 2: Then mix ghee or oil with stained flour like pouring consistency. You can also add besan flour directly to the sugar syrup with this step, but it requires some help, so I use this method it is simple and easy.

Step 3: Add sugar in non stick or heavy bottom pan, take more comfortable pan to pan and then add 1/4 cup of water and boil it until 1 string consistency. Just touch the sugar syrup with a thump and index-finger it forms string, then its ready to add the besan flour mixture.

Step 4: After adding keep stirring it without taking your hand from pan, to avoid burns and lumps. Once the flour is well combined, then add hot oil and ghee mixer little by little, The besan absorbs oil and cook well. Once you feel the change in color, release oil and produce a large white bubble without sticking in pan, then your mysore pak is ready to transfer.

Step 5: Switch off the flame and transfer immediately to greased plate, Level it and leave it for 10 minutes and make a mark with a sharp knife. Once cooled completely remove and enjoy.

Yuca root Fritter, Kilangu Vadai

Do you want some crispy evening snack? here this recipe for you. Yucca root fritters Kilangu Vadai in Tamil. This vadai made with yuca root (Cassava root, Tapioca root). In Tamil called as Kuchi kilangu, Kapa in malayalam. You can make as chips, vada, boil it and eat with sugar or make it as spicy yuca, dosa, cake etc.. Always I love to make Kilangu vadai. This is crispy and tasty snack.

How to remove yuca root skin?

Select yuca root without soft spots and clean white center. Yucca skin is hardy so it takes some time to remove the skin. There are three ways to peel off the skin.

1) Soak yuca root in water for an hour then make a cut in the outer skin with a knife and peel off the skin using hands it is an easiest way than normal and best way I use.

2) Cut into a large piece place root in horizontal position and Cut the edges with a knife, but in this you may loose some inner flesh.

3) Without soak in water some yuca will be easier to peel off the skin with a knife.

  1. Yuca root (Kuchi kilangu): 1 medium size
  2. Idly Rice: 200 gram
  3. Chana dal: 1 tbsp
  4. Red Chili: 1 (Round chili) or (Chili powder, green chili)
  5. Cumin seeds: 1 tbsp
  6. Garlic: 1 clove
  7. Ginger : Small piece
  8. Onion: 1 large (Chopped into tiny pieces)
  9. Coriander leaves a small bunch (10 sticks)
  10. Curry leaves: 1 sprig
  11. Salt

How to prepare vada(fritter) batter with yuca root?

Soak idly rice and chana dal for two hours, You can use rice flour instead raw rice. Grate yuca root with grater or cut into very small chunks, then in a mixer, add soaked ingredients, red chili and grate it without adding water.

Then add, grated yuca root and make a batter. Moisture present in yuca root is good enough for grinding. Use grinder to make this batter, It will be easy. By chance if you add more water for batter while grinding then adjust with rice flour. Vada absorbs more oil if batter is in running consistency.

Transfer this batter into a mixing bowl and add chopped onions, ginger, garlic, coriander leaves, curry leaves, cumin seeds, salt and mix well. Adjust salt and spicy depends your taste.

How to make yuca root fritter?

Heat oil in wide, deep bottom pan, Once oil ready (Check by putting a small piece of batter in oil, if it comes up, your oil is ready to make a vada). Keep a bowl of water, moisture your hand and take small batter, make a ball in hand and press with thumbs and carefully put in oil.

Five vada for one time frying is good enough (May change depends on pan). After 4 mins turned it and let it fry for 3 mins it looks light brown and the oil stops bubbling, Your vada is ready. Then carefully remove from oil and serve it.

Step 4: Transfer into mixing bowl, add onion, coriander leaves, curry leaves, cumin seeds, ginger, garlic, salt and mix well.
Step 5: Heat oil in wide, deep bottom pan.
Step 6: Make a small ball and press with thumbs and carefully fry in oil.

Ingredients Required:
1. Asparagus – 15 stems
2. Green bell pepper – 1
3. Chili Powder – 1 tsp
4. Coriander powder – 1 tsp
5. Pepper Powder – 1/2 tsp
6. Turmeric Powder – 1/2 tsp
7. Oil – 2 tbsp
8. Salt
9. Coriander Leaves
10. Lemon Juice

Method:
Step 1: Add oil in fry pan, let wait for 2 mins once oil gets hot, add chili powder, turmeric powder and coriander powder saute it with medium flame for a minute
Step 2: Add the Fine chopped asparagus, capsicum and mix well.
Step 3: Cover it and cook for about 5 minutes.
Step 4: Add in Pepper powder and salt and saute it for 2 mins.
Step 5: Garnish with chopped coriander leaves and lemon juice.
