What does horse gram mean?
Horse gram is one type of beans, Looks like black lentils. Widely used in many parts of India. One of lesser known legumes, It is called as kollu in Tamil, Kulthi in Hindhi, Ulavalu in Telugu. It is used as horse feed, by the name its says. Consumed by humans since ancient times.
How to make Kollu Chutney | Horse gram Dip
This is a super tasty chutney with steamed rice, along with butter or sesame oil. Also a great side dish for idli, dosa. For instant, Quick making, Roast horse gram until aromatic and follow other steps to make this chutney, Otherwise, soak horse horse gram for an hour and boiled it in pressure cooker or clay pot and use for making chutney with roasted small onion, red Chili, coriander seeds, garlic and curry leaves. For sour, tangy taste, use tamarind. If you love to use tomato, you can add, by reducing the amount of tamarind. I tried by adding tomatoes in this chutney, It also gives a super good taste. My mom always loves to use raw small onion in this recipe, It gives a different taste and reduce the body heat, Because horse gram having ability to generate heat in our body. Two ways, Instant roast horse gram to make chutney, or Boil it and use.
Ingredients Required:
- Horse gram (Kollu) : 150 gm
- Shallots (small onion): 10 Nos, optionally use large onions
- Sesame oil: 1 tbsp
- Urad dal: 1 tsp
- Cumin Seeds: 1 tsp
- Coriander Seeds: 1 tbsp
- Red chili: 2, Adjust depends taste
- Black pepper: 4 nos
- Garlic: 2 nos (large)
- Ginger: 1 small piece(optional)
- Curry Leaves: 1 sprig
- Turmeric powder: 1/2 tsp
- Tamarind: Small gooseberry size (1 tsp in paste)
- Salt
For Seasoning
- Sesame Oil: 1 tbsp
- Mustard seeds: 1 tsp
- Split urad dal: 1 tsp
- Curry leaves: 1 sprig
Method
Step 1: Soak horse gram for an hour, then pressure cook it with required salt and turmeric powder for about 4 whistle or place in large pot and boil it until soft.
Step 2: In a pan, add sesame oil, then roast, urad dal, coriander seeds, red chili, black pepper, cumin seeds, garlic, curry leaves, then transfer to plate and let it to cool.
Step 3: In same pan, add onions and cook until somewhat soft and let it to cool. If you use tomatoes, add next to onions and cook until tomatoes are just soft.
Step 4: Place all ingredients in a mixer jar with tamarind, required salt and ginger and make a smooth paste. If you love coarse paste, then make it as coarse paste.
Step 5: Transfer to serving bowl, then make a seasoning, Add 1 tbsp of sesame oil in a pan, once oil hot, add, mustard seeds, after mustard popped, add urad dal and curry leaves and pour in chutney and mix well.
