Chutney, Ridge Gourd Chutney

Ridge gourd Skin chutney is a side dish recipe for dosa, rice or idly, tasty and nutritious one made with the skin of ridge gourd. Simple and quick recipe to make. Peel the skin from ridge gourd and use for chutney and use the inner flesh to fry (Poriyal or kadayal). You can also use a small amount of the inner flesh for making chutney. Adding coconut in this recipe is optional. Enjoy this chutney with hot steamed rice with ghee.

Ingredients

  1. Ridge gourd: Use skin of 1 ridge gourd
  2. Oil: 2 tbsp
  3. Urad dal: 1 tbsp
  4. Chana Dal: 1 tbsp
  5. Red Chili: 2
  6. Curry leaves: 1 sprig
  7. Cumin Seeds: 1 tsp
  8. Garlic: 2 cloves
  9. Shredded Coconut: 2 tbsp
  10. Salt
  11. Tamarind: 1 gooseberry size

Method

Step 1: Add, 1 tbsp oil in pan, then roast the urad dal, chana dal in medium flame until aromatic and slight color change, then add red chili, cumin seeds, Curry leaves and roast it.

Step 2: Transfer this roasted ingredients in a plate and let it to cool.

Step 3: In same pan, Add another 1 tbsp Oil and then add garlic cloves and saute it for a minute, Next add, Ridge gourd skin and cover it for two minutes and then add required salt and cook it until color change.

Step 4: Mix all ingredients together in mixer with 2 tbsp of grated coconut and tamarind and make a chutney.

Kollu Chutney

What does horse gram mean?

Horse gram is one type of beans, Looks like black lentils. Widely used in many parts of India. One of lesser known legumes, It is called as kollu in Tamil, Kulthi in Hindhi, Ulavalu in Telugu. It is used as horse feed, by the name its says. Consumed by humans since ancient times.

How to make Kollu Chutney | Horse gram Dip

This is a super tasty chutney with steamed rice, along with butter or sesame oil. Also a great side dish for idli, dosa. For instant, Quick making, Roast horse gram until aromatic and follow other steps to make this chutney, Otherwise, soak horse horse gram for an hour and boiled it in pressure cooker or clay pot and use for making chutney with roasted small onion, red Chili, coriander seeds, garlic and curry leaves. For sour, tangy taste, use tamarind. If you love to use tomato, you can add, by reducing the amount of tamarind. I tried by adding tomatoes in this chutney, It also gives a super good taste. My mom always loves to use raw small onion in this recipe, It gives a different taste and reduce the body heat, Because horse gram having ability to generate heat in our body. Two ways, Instant roast horse gram to make chutney, or Boil it and use.

Kollu Chutney

Ingredients Required:

  1. Horse gram (Kollu) : 150 gm
  2. Shallots (small onion): 10 Nos, optionally use large onions
  3. Sesame oil: 1 tbsp
  4. Urad dal: 1 tsp
  5. Cumin Seeds: 1 tsp
  6. Coriander Seeds: 1 tbsp
  7. Red chili: 2, Adjust depends taste
  8. Black pepper: 4 nos
  9. Garlic: 2 nos (large)
  10. Ginger: 1 small piece(optional)
  11. Curry Leaves: 1 sprig
  12. Turmeric powder: 1/2 tsp
  13. Tamarind: Small gooseberry size (1 tsp in paste)
  14. Salt

For Seasoning

  1. Sesame Oil: 1 tbsp
  2. Mustard seeds: 1 tsp
  3. Split urad dal: 1 tsp
  4. Curry leaves: 1 sprig

Method

Step 1: Soak horse gram for an hour, then pressure cook it with required salt and turmeric powder for about 4 whistle or place in large pot and boil it until soft.

Step 2: In a pan, add sesame oil, then roast, urad dal, coriander seeds, red chili, black pepper, cumin seeds, garlic, curry leaves, then transfer to plate and let it to cool.

Step 3: In same pan, add onions and cook until somewhat soft and let it to cool. If you use tomatoes, add next to onions and cook until tomatoes are just soft.

Step 4: Place all ingredients in a mixer jar with tamarind, required salt and ginger and make a smooth paste. If you love coarse paste, then make it as coarse paste.

Step 5: Transfer to serving bowl, then make a seasoning, Add 1 tbsp of sesame oil in a pan, once oil hot, add, mustard seeds, after mustard popped, add urad dal and curry leaves and pour in chutney and mix well.

How to Cook Mint Chutney|Green Chutney ingredients and steps:

Ingredients Required:
1. Mint Greens : 1 bunch
2. Coriander Leaves: 1/2 bunch
3. Oil: 2 tbsp
4. Mustard seeds: 1 tsp
5. Asafoetida powder a pinch
6. Chana dal: 1 tbsp
7. Urad dal: 1 tbsp
8. Cumin Seeds: 1 tsp
9. Sesame Seeds: 1 tbsp
10. Onion: 1
11. Green Chili: 1 Chopped
12. Red Chili: 1
13. Garlic: 2
14. Ginger Root: 2 pieces
15. Coriander seeds 1 tsp(Optional)
16. Curry Leaves
17. Coconut 1/2 cup
18. Tamarind half lemon size(or)1 small Tomato
19. Lemon juice of half lemon
20. Salt as required
Method:
Step 1: Add oil in a pan after the oil gets heated, add in the mustard seeds, then add cumin seeds, urad & chana dals, Sesame Seeds, asafoetida powder saute it until roast.
Step 2: Add in ginger, garlic, onion, chili and curry leaves, saute it for a minute.
Step 3: Then add, greens and saute it for 5 minutes. Then add, turmeric powder and coriander powder is optional with salt and saute it until leaves cooked.
Step 4: After greens, cooked well switch off the stove and then add, coconut and tamarind.
Step 5: Cool it and add, all the ingredients in a mixer jar with lemon juice and water and make a sauce.
Note: If using tomatoes, add after onions and continue next steps.

Method with Photos:

Wash Mint and coriander leaves with water to remove all dirt and drain excess water. In a hot pan, add oil and then add dals, cumin seeds with sesame seeds. Saute it for a minute.

It will produce nice aroma and dals become light brown. Then add, chopped onions, chilies, ginger and garlic with curry leaves. Curry leaves gives a nice flavor to every recipe in south Indian cooking. Saute it for 2 minutes to get the onions cook.

After that, add the washed mint and coriander leaves and saute it for 5 mins to cook. Once the greens cooked off the stove and then add coconut and tamarind and saute it. You can skip the tamarind while adding tomato and lemon juice.

Cool it and then add all in together in a mixer jar with lemon juice and grind it. Lemon juice of half lemon is good enough.
